Cooking lessons with Marco

By: Marco | August 19th, 2008

Just a quick note of advice to everyone. Insalata caprese + Shrimp caprese + Baklava = serious business in my stomach. I have never been so full but if I had to eat it all over again I would. I know what your thinking; wtf is Baklava? Baklava is a pastry from Turkey & Iran that has hundreds of forms and is very very good. While mixing recipes and what not for lunch & dinner may not make since I have found that its very good. Take last night for instance for dinner I had Basteeya (Moroccan chicken pie) and Sfingi (Sicilian donuts) that were great. For breakfest though I drink my usual overly strong coffee and maybe some filo.

Onto calcio news. We beat Pergocrema 3-1 in a friendly and former captian Gentili scored for Pergo while Garics, De Ascentis and Doni scored for the Nerrazzuri. Its a comfortable win and it is the preseason but a bigger margin would have been better. Maybe the high expectations are too much but it doesn’t hurt. Meanwhile I really really can’t wait for the Serie A openers……it seems like time is dragging by. The Euros were fun to watch but god is life boring without calcio.

i would suggest another Sicilian piece of deliciousness: arancini.

Besides, sometimes you may want to be careful of arancini. I once asked the proprietor of a cafe in Palermo what was in the arancini I had ordered. He looked at me and said “carne” (meat). I got the impression that I did not want to know the specifics.

Johonna – that’s because that would be the typical response you would get when asking that question. There’s nothing at all to be afraid of inside arancini.

Well, some of them are filled with ground tripe. Some people like tripe, others dont. Usually, I choose not to eat organs or entrails. The ones at this shop were tripe. They tasted great, but if I had known, I probably would not have purchased them.

Tripe is nasty and it’s all over Italia…..I’ll stick with greens and beans.

Marco, what college do you go to?
